Cleaning the fridge II



Ok, here's another dish that's similar to early post designed to clean the fridge/freezer. And that's exactly what I did.
Ingredients:
  1. 1 Cup brown rice
  2. Plenty of frozen okra
  3. 3-6 Sausages (I used turkey sausage this time)
  4. Half an onion (chopped)
  5. Salt/Pepper
  6. 1 Can mushroom soup
  7. Milk (1 Can full)

Place all of the ingredients in a casserole dish and mix together. Bake the whole mixture for about 1.5 hours on 400 degrees. Done and done.

Can't go wrong with Stoudt's


One of the "funnest" things about eating well is pairing the food with the proper beverage. I'm going to take the opportunity here to promote the Stoudt's Brewery. They have numerous different flavors but this one is the Double IPA. A case of this stuff will make you go broke but I tried one these little gems the other night and was blown away. It seems to go really well with grilled chicken. Though I didn't try it with anything spicy, I can't help but think it will match perfectly. To be honest I just popped one open as I was writing this post because the picture was making me thirsty.

Cleaning out the fridge

Back to the kitchen. Here's a nice healthy dish you can make with very little effort
Its basically a toss in of ingredients that you have left over in your fridge. Feel free to vary the ingredients as you wish.
Ingredients:
  1. Brown rice
  2. Chopped onion
  3. Chopped broccoli
  4. Choped okra
  5. Fresh garlic
  6. Can of butter beans
  7. Cup of chicken broth
  8. Mozzerella cheese
  9. Few strips of chopped bacon (optional)

Just sautee the onions and garlic in a little olive oil. Steam the veggies and add them in as well. Boil the brown rice for about 3/4 of the time you would normally. It will finish cooking when you bake it. Next pour in the can of chicken broth, mix in some grated mozzerella cheese and bake for 20 minutes or so.

Braving the elements!

I couldn't help feeling like I let everyone down by posting pictures of quiches and lame excuses about giving in to the elements. Therefore here is my rebound...Grilled Lemon Chicken. The night before I marinated a few chunks of bone-in chicken in some olive oil, fresh lemon juice, salt, pepper, fresh garlic, and onion powder. An easy way to do this is to just take a sealable plastic bag and toss all of the ingredients in together. This time I kept the chicken skin on...I figure I have a few more months before bikini season starts anyways.

Shrimp and Broccoli Quiche







Since I'm snowed in I decided to dust off my oven and whip up a couple of shrimp and broccoli quiches. Abe seems to want to take credit for this recipe but I won't let that happen until I get the recipe for a homemade crust.


Ingredients:
  • 2 Frozen pie crusts
  • Bag of precooked shrimp
  • Head or two of broccoli
  • Onion
  • Garlic
  • Shredded cheddar cheese
  • Milk or cream
  • 4-6 Eggs
Directions
  1. Defrost shrimp (if necessary)
  2. Poke a few holes in your pie crusts and place shrimp in the form
  3. Chop up and sautee the onion with some olive oil and the freshly chopped garlic
  4. Cut up the broccoli into bite sized pieces and steam them
  5. Scramble the eggs with the milk or cream
  6. Fill the pie crusts with the sauteed onion and broccoli and top with plenty of cheese followed by the egg mixture
  7. Bake the quiches in the oven until they are no longer liquidy (~45-60 mins)

The BBQB hates to admit it but he let the elements get the better of him and he had to hang up his tongs for a few days. My Weber looks in sad shape but I should be back in action soon.

Prince's Hot Chicken, Nashville, TN


Though this is not related to grilling or BBQ'in I thought I'd pass the name of this restaurant on to everyone. It's a small place in the Nashville area called Prince's. They serve some incredibly spicy fried chicken that is a must try if you are ever in the area. Don't be fooled by their appearance, this is some tasty stuff.
